I love this creamy and delicious rice pudding for breakfast. Make the night before or spend the time in the morning. It can be made in a slow cooker but I've never had luck with that method... It's a great recipe for those with stomach upset or trouble digesting.
1/2 cup short grain brown rice
3 cups almond milk
1 can coconut milk
1/2 tsp salt
1/2 tablespoon vanilla
Put all in pot and bring to boil on medium heat, stirring occasionally.
Cover partially and let simmer for for an hour.
Top with berries or coconut shavings.
Makes 2-3 servings
